SUCCESSFUL BAKING – Measurements and Conversions
Getting the right measurement from conversion of Imperial or American equivalents metric systems is very important. This correct measurement will ensure that your cakes turn out well. The dry and liquid measures are different as in the measures for fats.
The success of any cakes, scones and breads depends on accurate measurements.
Rule 1 – Measure ingredients before doing anything else. Do not measure the ingredients while you are in the halfway through the mixing. That’s speaking from experiences, I saw my sister doing that and her cakes did not turned out well.

I have a bad habit of not following through correct measurement and when the recipe ask for just enough flour to mix a nice consistency, I have a tendency to add in more then to throw the excess away. I dislike wastage when baking or cooking.

Lifestyles Ideas Management - My Travel Plans

Last Saturday after work I met up with my sister at the People’s Park Centre (for those not living in Singapore, People’s Park Centre is in Chinatown. Like any Chinatown elsewhere in the world, it looks like Chinatown alright except we do not have an erected gateway like the one you see in Yokohama or in Sydney, New South Wales, WA.

What is wonderful about People’s Park Centre is the many numbers of travel agent, most of these travel agents that is listed in The Straits Times Classified Travel Ads. The Straits Times is our national newspaper with the most circulations and is part of your coffee items at breakfast.

We went around with nothing in mind except to getaway for the coming Lunar New Year, somewhere not too cold as my mum cannot take coldness. Our travel plans have to suit her as she is old and what if she falls ill during our journey. My brothers and sisters will put blame on me and hold me responsible for life.

In fact we like to visit the Three Gorges in Yangtze River cruising in MV Victoria which is a five stars cruise liner plying in between Shanghai PuJiang and Yangtze River.
I came across this liner while watching the TV Show on “the lifestyles of the rich and famous”. This liner is for the rich and famous as there are different floor levels, the lower the floor the cheaper cabin rates. No matter how cheap the cabin rates it is still expensive
to a salaried man ( salaried man is a person who is on some one payroll).
We will have to shelf this dream trip to the next few years or visit in the summer autumn season. There re many places which I intend to visit as much as my bank account permits, places like Alaska, Japan and the Inner Mongolia, just too many places to name them.

We went around and finally set with an well established travel agent, Giamso International Travel Pte Ltd. They specialized in Chinese cities trips and it happened there is a Silk Air promotion offering tickets to Xiamen, Fujian Province, quite a fair bit of savings. We signed on a package land tour that takes us from Xiamen right up north side to Shangtou. This trip is really down memories lane type where it is off the tourist track, it is not that commercial like Shanghai. We prefer to travel lesser known cities and off-beaten tracks where you get to use daily life of common folks. You get to see the life as in a slower pace and no rush at all, time is on our hand.

I am looking forward to this trip and will be writing on this in the months. It is time to smell the flowers and stand still to watch the clouds passes by. How wonderful if you can be there with me, promise to take many pictures and download in MYBLOGLOG.

Quite sad that I have come to the end of Internet Marketing course, this week 48 will be my last lesson on Traffic Generation. But nevertheless I can still keep in touch with our lecturer on the Forum. What a great lecturer he is and I never fail to recommend anyone who like to take up Internet Marketing to register his class. He is very generous with his knowledge and know how to, always sharing and revealing his entire shortcoming when he was a novice in Internet Marketing. SUCCESSFUL BAKING - Bread
Flours
The most commonly used flour for bread making is wheat.
Strong wheat four has high gluten content and gives a better volume of bread as it absorbs more water and makes a lighter dough.
White flour can also be used however the bread is light and have very little weight

Kneading
Kneading is an essential pat of bread making as it helps to develop the gluten and the rise of the dough. Flour a board and use the palms of the hands, almost to the wrists to push and turn the dough. As you work you can actually feel the texture changing to a smooth, elastic but not sticky consistency.

Proving
Always cover the dough when setting it to prove
The yeast in the dough need warmth to start working
The ideal temperature is between 98 and 100 degrees F
Too much heat will kill the yeast, too little will stop it from working
The best place to leave the dough to price is a warmth place, near the cooking stove
The time taken for the dough to rise will depend on the warmth but it usually takes 1 -1 ½ hours. The second rising is quicker usually between 20 minutes and half and hour

SUCCESSFUL BAKING
I love to eat pastries especially the savory ones.
Just too mouth-watering to pass by a pastry shop (not those ordinary pastry eateries) but those that specializes in just pastries. By looking at the pastries, I can tell whether it will taste moist or dry, the finishes of the pastries is just too important not to ignore.
I like pastries and eat them only when there is a strong craving as the fat is just a little too much for my cholesterol limit.
The layers and layers on top of one another simply look too good to eat, I especially like the feeling of just one bite and the whole flaky layers just fall everywhere on the plate.
Can you hear the sound of just one bite on the pastries?

I am listing all the Pastry recipes:

FLAKY PASTRY
450g plain flour, sifted
1 teaspoon salt
350g butter or pastry margarine (softened to cut)
1 teaspoon lemon juice
300 ml cold water

Mix together the flour and salt
Divide the fat into four portion
Rub one portion into the flour with fingertips
Mix in the lemon juice and cold water to a soft dough
Knead gently on a lightly floured board until smooth
Roll out to a rectangle three times longer than the width
Dot the second portion of fat over the top two thirds of the surface
Fold the bottom third and fold down the top third seal the edges by pressing together
Wrap in cling film and chill for 15 minutes
After 15 minutes place the dough on the floured board with the folded edges to your right and left and roll out again into a rectangle.
Repeat the dotting, folding and chilling process twice until all the fat is used up
Wrap again and chill for at least 45 minutes before using

PUFF PASTRY
450g plain flour, sifted
1 teaspoon salt
450g butter, softened to cut
1 teaspoon lemon juice
75 -100 ml iced water

Mix together the flour and salt
Add 50g of the butter, cut into small pieces
Rub into the flour until mixture resembles fine breadcrumbs
Add lemon juice and enough water to a soft dough
Knead lightly until really smooth
In a clean cloth, shape the remaining butter into a rectangular
On a lightly floured board, roll out the pastry to a rectangle slightly wider than the rectangular butter and about twice its length
Place the butter on one half of the pastry and fold the other half over
Press the edges together with a rolling pin
Leave in a cool place for 15 minutes to allow the butter to harden slightly
Roll out the pastry to a long strip three times in its originally length but keep the width the same
The butter should not break through the dough
Fold the bottom third up and the top third down press the edges together with a rolling pin.
Put inside a plastic bag and chill for 30 minutes
Place the dough n the floured board with the folded edges to your right and left and roll into a long strip as before.
Fold again into three and chill for a further 30 minutes
Repeat the process four times more and chill for 30 minutes before using
This is best made over two days, rolling three times and chilling overnight before completing the rolling the following day

RICH SHORTCRUST PASTRY
450g plain flour, sifted
A good pinch of salt
350g butter, softened
2 egg yolks
4 teaspoons caster sugar
3-4 tablespoon cold water

Mix together the flour and salt
Rub in the butter until the mixture resembles breadcrumbs
Make a well in the middle
Add the egg yolks and sugar mix with a palette knife
Add enough of the water a little at a time to give stiff but pliable dough
Knead lightly until smooth
Wrap in a cling film and chilled for at least 15 minutes before using

ROUGH PUFF PASTRY
450g plain flour, sifted
A good pinch of salt
350g butter or pastry margarine (softened to cut)
1 teaspoon lemon juice
3-4 tablespoons cold water

Mix together the flour and salt
Cut the fat into small pieces and stir lightly into the flour with palette knife
Make a well in the middle
Add lemon juice and mix enough water to give an elastic dough
On a lightly floured board, roll out the dough to a long strip keeping the side straight
Fold up the bottom third and fold down the top third and turn the dough so that the folded edges are to your right and left.
Repeat the rolling and folding process three times more
Chilling the pastry for 15 minutes between the third and fourth rolling
Chill for at least 15 minutes before using

SHORTCRUST PASTRY
450g plain flour, sifted
A good pinch of salt
100g butter, softened
100g pastry margarine
3-4 tablespoon cold water

Mix together the flour and salt
Rub in the butter until the mixture resembles breadcrumbs
Add enough of the water a little at a time mixing with a fork to give stiff but pliable dough
Knead lightly until smooth
Wrap in a cling film and chilled for at least 15 minutes before using

Method
Preparing tins
It is wise to line and grease baking tin. Grease the tins with whatever fat or oil is to be used in the recipe. Then line with greaseproof parchment. Cut a single piece for the bottom of the tin and when fitting paper to the side, cut into corners to make sure that it lies neatly against the tin. If necessary to cut and overlap as the sides of circular tins slope slightly.

Oven temperatures
The oven has reached the correct temperature before putting in the item to be baked.
If you are not sure whether your oven is accurate, buy a thermometer and make regular checks.

Cakes, Scones and biscuits
Use the right tin for the recipe.
Smaller or larger tins will affect the baking time and hence the texture of the finished cake and biscuit. Except in fan-assisted ovens, most cakes and biscuits bake best in the middle rack. Rich fruit cakes and large cakes should be placed just below the centre and small plain cakes, swiss rolls and scones just above.
Do not open the open when the cake is baking during the first three quarters of baking time better still not until you think it may be ready.
When placing biscuits on prepared tins, allow room for biscuits to spread during baking.
It is better to leave too much room then to have the biscuits merge into one mass.

Is it ready?
To see if the sponge is ready, press lightly with a finger. If it spring back it is cooked,
To test fruit cakes and gingerbreads, stick a skewer into the middle of the cake and withdraw it immediately. The skewer should come out clean, the cake is done.
Biscuits should be ready when they turn golden brown. Scones are firm, well risen and golden when cooked. If cake darkens too quickly on the top, place a double layer of greaseproof paper over the top and continue baking as usual.

Today is Sunday and it is a Sabbath day ( a day of rest) indeed it is a day of rest.
Rest from doing the routine work; away from the daily grind of work, work and more work.
Sunday is a day which I put aside to do something special.
Like trying out some special dish and bake bread, do something which you do not normally do during the week days. Sunday is the day you can unwind your body to suit the day, your body can read you mind and when Saturdays comes, your body automatically unwind.

Let’s do something special which we always put aside during Sunday, if there is nothing else to do. We will pick up this one thing needful to do. Let’s catch up with some reading.
Whenever I read a recipe book on baking, I hardly read the introduction or writes out on the ingredients, conversions or measurements and failures and solutions.
When I need them and I could not find them, cannot remember which recipe book state these useful information.

SUCCESSFUL BAKING
Let us start with the Ingredients.
Flour
Plain flour is used for pastries and shortbreads where there is little rise required. To convert plain flour to self-raising flour, add baking powder in the quantities stated in the recipes. ( I will try to work out the quantity next time). Self-raising flour is used for cakes which need a raising agent. Always store flour in a cool dry place, preferably in an airtight container. Sift before use to remove any lumps and also to incorporate extra air before adding to the cake mixture.

Raising Agents
Baking powder is the most commonly used raising agent. It gives off carbon dioxide which forms bubbles in the mixture. These expand during baking making the cake, scones or biscuits rise and help to produce a light texture. Too much baking powder can cause sogginess and heaviness.
Bicarbonate of soda is often used in recipes which include sour milk or buttermilk, spices treacle and honey.
Sour Milk is sometimes necessary to give extra rise to heavy mixture such as gingerbreads. It can be made at home allowing milk to sit in a warm atmosphere until it curdles.
Yeast is used in breads. Dried yeast keeps for several months in an airtight container. Fresh yeast lasts for about a week in the refrigerator and will freeze for up to six months.

Fats
Butter and Margarine are interchangeable in most recipes but butter is preferable in shortbreads and rich cakes. Oil is excellent in carrot cakes and chocolate cakes. Allow butter and margarine to soften in room temperature for an hour before using.

Eggs
Eggs should be at room temperature as taken straight from the refrigerator are more likely to cuddle. Small eggs are too small for most recipes. Use large or medium size eggs.

Sugar
Caster sugar is generally used for creamed mixture as it gives a lighter texture.
Granulated sugar is acceptable in rubbed in mixture but an produce a slightly gritty texture. Better to use caster sugar.
Demerara Sugar is very good in tea breads and mixture where ingredients are melted together such as gingerbreads and boiled fruit cakes. It is excellent for sprinkling on the top of loaves and biscuits.
Soft Brown Sugar gives a caramel flavor and beats well in creamed mixtures. The darker the variety the stronger flavor.
Black Treacle has a dark color and strong flavor and is often used in gingerbreads and some fruit cakes.
Golden Syrup gives a soft moist sometimes tickly texture which is suite for gingerbread and flapjacks.
Honey adds a very special flavor but too much will cause the mixture to burn easily.

Recently something strange is happening in my neighborhood, strange because my neighborhood is usually safe and quiet. Usually safe is because there are nearby shop houses which will sell their ware till late in the nights. The eateries is full of people eating throughout the late nights till 12 ~ 1:00 am. It is safe to come home during the wee hours.

Where on earth can you find people coming home in the wee morning hours and still be safe?
I think only in Singapore, we can enjoy such security.

The strange thing that happened last week, in the wee hours about 12:30 midnight while asleep, I heard a loud loud thud from my 25th floor, sound like something hard crashes on the ground floor. I thought perhaps someone has thrown it down the rubbish chute.

The next morning all was quiet until when I came reach home did I know that a flower pot had fallen from a upper floor and damaged the roof of the link way below the apartment. It is very scaring to know that it is not safe to walk on uncovered link way and below the apartment, any thing can fall over our head at any time.

Under the Housing Lease Clause 2 (1)(c), whereby the owner are not to place or permit to be placed any thing or objects in the flat or the common areas or any part of the Building so as to create an obstruction or a danger or trap to occupiers or visitors.
If you commit a breach of this covenant, the Housing Authority is empowered to compulsorily acquire your flat.

Housing Authority takes a very serious view of such irresponsible acts of the residents which endanger the safety of any member of the public. Housing Authority will not hesitate to recover possession of any sold flat if the lessee, his spouse or occupier fails to heed such notice. To prevent any unfortunate incident, we are reminded to refrain at all times from placing potential killer objects at any location in our apartment or the common area in a manner which may endanger the safety of others.

We must ensure a better and safe environment not only for others but also for our own safety. That is our responsibility as a good neighbor to love our neighbor as we will loves ourselves.

Apricot Coffee Cake

Ingredients
150 gm self-raising flour (sifted)
100 gm butter
100 gm sugar
2 eggs
2 tablespoon milk
Baking tin size 11” x 7” x 1”

For toppings

Dried apricots (washed and soaked in water for 5 minutes & drain)
Sour cream – 2 tablespoon
1 egg yolk
Chopped almonds (lightly toasted)

Method

Heat oven at 160 degree C

Line the base of baking tin with baking paper

Cream butter & sugar till light & soft

Add eggs and mix well

Fold in the flour and mix with milk

Arrange apricots, distributing evenly so that each portion will contain one apricot

Beat egg yolks with sour cream & drizzle over the mixture and apricots

Sprinkle with the chopped almonds

Bake for 30-35 minutes until brown

Oven-turn cake and peel off paper and put at the back of the tin to cool

Cut cake in portion and serve warm

Water is an important structural component of skin cartilage, tissues and organs.
For human beings, every part of the body is dependent on water.
Our body comprises about 75% water, the brain has 85%, blood is 90, muscles are 75%, kidney is 82% and bones are 22% water.

The functions of our glands and organs will eventually deteriorate if they are not nourished with good clean water.
An average adult loses about 2.5 litres water daily through perspiration, breathing and elimination. A symptom of the body deterioration begins to appear when the body loses 5% of its total water volume. In a healthy adult, this is seen as fatigue and general discomfort, whereas for an infant, it can be dehydrating.

In an elderly person, a 5% water loss causes the body chemistry to become abnormal especially
if the percentage of electrolytes is overbalanced with sodium. One can usually see symptoms of aging, such as wrinkles, lethargy and even disorientation. Continuous water loss over time will speed up aging as well as increase risks of diseases.

If your body is not sufficiently hydrated, the cells will draw water from your bloodstream which will make your heart work harder. At the same time, the kidneys cannot purify blood effectively.
When this happens, some of the kidney’s workload is passed on to the liver and other organs, which may cause them to be severely stressed.

Additionally, you may develop a number of minor health conditions such as constipation dry and itchy skin, acne, nose bleeds, urinary tract infection, coughs, sneezing, sinus pressure and headaches.

So how much water is enough for you?
The minimum amount of water you need depends on your body weigh.
A more accurate calculation is to drink an ounce of water for every two pounds of body weight.

Crispy Waffles

This noon, we went to a nearby food centre for our usual lunch.
We ate fish ball noodles (dried) served with soup, fish ball noodles is a common food in Singapore and surprisingly it should have become one of our uniquely Singapore Icon.We grew up eating lots of fish ball noodles during that time; this is the only noodles available everywhere in the food center.

While eating, someone place a laminated menu on our table. By the glance we would tell that it was serving western grill food. On the desserts, they serve waffles topped with ice cream or maple syrup. We thought it should be delicious and the price is reasonable.
We ordered banana split (three scopes of different flavors side with banana, top with chocolate cream and chopped peanuts, waffles with maple syrup.

The presentation of the food is nice, nothing fuzzy, what you see is what you get.The waffles smelled nice and taste very good. The ice cream taste is what you will usual get in the tub at the supermarket.

I tried one waffles recipe from the Internet and it is good.
This recipe can be used for making pancakes as well, as I have adapted the recipe.

Crispy Waffles
(Makes 12 of 2 ½ inches (6cm) waffles)

Ingredients
75 gm flour (if use self-raising flour, skip the baking powder)
Pinch of salt
1 ½ teaspoon baking powder
2 tablespoon sugar
1 egg separated (for pancakes, do not separate the egg)
1 tablespoon melted butter
125 ml milk
Knob of butter for cooking (I use olive oil)

Method
Sift flour, salt and baking powder into a bowl
Add sugar, beaten egg yolk, butter and milk
Beat until smooth

(For pancake, heat a flat pan under slow fire, pour 1 rounded tablespoon batter into centre of the pan until it spread to the edges. Cover the pan if you want the pancake to raise a little. Cook for 1 minute and turn over to the other side for another minute until golden brown. Serve hot with the following toppings.

For crispy waffles
Alternatively place these ingredients in a food processor and run machine until batter is smooth.Through butter a waffle iron and heat slowly for 5 minutes.
Whisk egg white until stiff, and fold into the batter.
Pour 1 rounded tablespoon batter into centre of the lower half of iron until it spreads to within 2.5 cm of the edge.
Close and cook about 1 minute turning if necessary until the waffle is good brown and release easily from the iron.
Serve the waffles hot with the following toppings.

Toppings

Maple syrup
Natural honey
Jam
Whipping cream
Chocolate cream
Strawberry cream
Butter cream

Now Calpis is exported to more than 30 counties. Calpis is marketed in US and Indonesia under the brand name “Calpico” and in Taiwan, it is called “Keerbiss”.

I do not know much about “the sweet yet sour taste of first love” but it is indeed a nice cool drink and it taste good in the mouth. Our family used to drink this Calpis and it tasted good,

we can remember the taste so well because of it slightly sour and sweet taste.

A special kind of drink, not much of a milk taste at all and the packaging is unique and special.

Calpis is good for the stomach because it is a lactic acid drink. It’s also good for stress, fatigue and effective for calming high blood pressure.
It is a concentrated soft drink made from milk.
Kaiun Mishima was born in 1878 in Osaka.
Kaiun was so weak when he was small and couldn't even speak well. But his mother took such great care of him that he overcame his problems. He went to live in the Literature dormitory of Nishi Hongan-Ji Temple.
I don’t want to take over my father’s job because he puts my gentle mother into a lot of trouble, thought Kaiun.
In 1902 Kaiun had become an English teacher. He entered a Buddhist university and decided to go to China to seek his dream. Kaiun found a job in a middle school in Beijing. There he met Goro Tsuchikura son of a forestry magnate in Nara, Japan. I’m planning to start a big business. Do you want to join me? I will bring Japanese items over here and sell them. We will make money together.

In 1903 they set up “Nikka Yoko” a trading company in general goods, predecessor of the present trading company.
Kaiun and others formed a wagon train and went as far as to Mongolia to sell the goods.
In Mongolia, this is good! What is this? Kaiun asked the Mongolian man.
This is johi. This is made from horse or sheep milk. It is put in an earthenware pot and then fermented with lactic acid. Then you get the johi cream. The fluid that remains is called acid milk. I have always lived with weak intestines. I feel much better then I’m in Mongolia then when I’m in Beijing. Thanks to johi, remarked Kaiun.

On 1909 Kaiun started stock-farming of sheep with the money he got with the”Nikka Yoko” trading company.
He gained support from the Qing government and the business went well.
However, in 1912, a revolution broke out and business became impossible to continue because the Qing Government collapsed. In 1915, 38 years old Kaiun returned to Japan with literally no money.
In the milk hall (cafe) he ordered Yogurt.
What is this? It tastes like what I had in Mongolia, but it’s something different.
Johi is good for health. I want to make it in Japan, too. I learnt how to make it.

All I do is to ferment milk with lactic acid and extract the cream. I can do it.

With a recommendation from Goro Tsuchikura, Kaiun went to see first rate doctor.
Kaiun would always go to the most eminent people in the field for advice when he wanted to start something.
This is his principle of “best in Japan” which helped him greatly to succeed in business as well as to gain many friends.

In 1916, Johi was completed. He named it “Daigomi” (daigo is originally a dense and sweet drink made from milk) and named after the company Daigomi Limited.
He wrote an article in Jitsugyo no magazine by Jitsugyo no Nihon Inc (Japanese publishing company) to introduce
the product “ Daigomi was sold through mail as well as at liquor stores. It sold very well.
However, since only 1.8 liters of “Daigomi” could be made from 18 liters of milk, they had to abandon the manufacture due to low productivity. In addition, the remaining skim milk is a problem. It isn’t good as cattle food or fertilizer.
It is nutritious and has sterilizing power, too. I will make it as a kind of sauce. Named “ Daigoso” it didn’t sell at all.
I will make caramel with it. I would melt in the heat. This did not work either.

Mr Mishima, it tastes good if you put “Diagoso” with sugar in the water.
One day, Kaiun saw a glass of “Daigoso” drink they had served to a customer and left for one day. I don’t want to throw it away. Kaiun drank it. It tastes better than yesterday. What does it mean? The ferment in the air got into the milk and furthered the fermentation. This is it!

After repeated research, they came up with a method to deter fermentation by heat processing.
This is the way to go. We have to name it calcium for milk. Daigomi in Sanskirit it Sarpilmanda, and when it’s further fermented, it is called Sarpis. I am thinking of either Calpil or Calpis.
Kaiun sought advice from Kosaku Yamada, a composer and first class phonetician.

On July 1919, Calpis made its debit. It gained great popularity.
In 1922, they came up with catch phrase: Calpis, “ the sweet yet sour flavor of first love”.
Its packaging was white dots in black paper, resembling the Milk Way. This comes from the date of the first sales.
The star festival. Due to lack of ink after World War II however, the package was renewed to blue dots on white.

In 1923, the company was renamed Calpis Manufacturing Co Ltd.
They picked one of the posters from a world-wide contest as the trademark.
It was used until 1990.
Calpis tastes clear and simple, but has a long history to it.

QP Mayonnaise is our family favorite mayonnaise.
We begin eating mayonnaise way back the 70s. There and then I had my first taste of this product, though I did not know the brand but recognize Kewpie trademarks. The mayonnaise had a light taste, slight smell of eggs and most important is the cholesterol free. The packaging is nice and easy to hold for use and with the nozzle pattern each squeeze looks nice on food as presentation.
Later then, whenever I am shopping with friends I never fail to recommend them for use in all types and kind of salads and sandwiches.

Mayonnaise goes well with every fried food, French fries, chicken nuggets, fish and chips, fish nuggets, fried chicken pieces. It simply tastes delicious with mayonnaise as a dip.

The French brought the seasoning used by the people of Mahon port on Minorca Island in the Mediterranean Sea to Europe. They called it mayonnaise from the name of the place where it came from. That is the origin of the word
“Mayonnaise.”

Mayonnaise first came to Japan in 1925. Toichiro Nakajima, founder of QP gave a twist to the taste he had come to know in the US and created original mayonnaise for the Japanese market. There is the story of Q P mayonnaise which continues to dominate the market with an outstanding market share of 80 percent. Now the share market could have been easily over 100% mark.

The story was told in animate form and makes it easy for fun reading, illustrations by Ryuji Fuji.

Toichiro Nakajima was born in the 1883 as the first son of Juntaro Nakajima, a doctor in Nishio City, Aichi Prefecture. His mother died when he was still small and he moved to Tokyo with his stepmother and other members of the family. But he didn’t get along well with his stepmother and failed to find interest at school.

Toichiro, you won’t make it to medical school. His father told him.
I don’t care for medical studies. I’ll go to the Institute of Fisheries (University of Fishes) instead. Toichiro answered.

In the summer of 1905 Toichiro worked part-time at a hotel in Nikko, partly to practice his English.
You’ve been a great help especially with fussy guests. I really appreciate that. Why don’t you stay on and work for us at the monthly wage of ¥60? The manager told him.
Oh, thank you, sir. Toichiro replied.
It was then that he came to believe that “if you make sincere efforts, regardless of the immediate profits or losses, it will be recognized.”
But I don’t think I’m cut out to work at a hotel. Thank you for your offer anyway.” Toichiro decided.

In 1908 Toichiro joined a railway company as an engineer.
A year later he left the job and started to work at Wakana Shoten (firm) a small wholesaler of canned foods.
Here I can gain something by working hard, he thought.
We are short of workers. You go to Hokkaido at once. Then go to Kamchatka to can red salmon!
Toichiro went. Upon his return to Tokyo, Toichiro ran into Mr. Gill from whom he had known during his days at the railway company. Toichiro, now is the time to work with the Western world, not for Japan alone. Let’s work together in England! Mr. Gill requested.
In those days, the shortcut for studying abroad was to pass the Ministry of Agriculture and Commerce’s examination for overseas business internship.
In 1912 he set sail for England.

This is marmalade, sir.
I see. I’ll try to make it myself when I’m back in Japan.
While he was in London, he learned the recipe from his landlady.
He researched canned foods in London but then World War I began.
Soon I won’t be able to do anything her. I should go to the US (that is the United States of America, 1915.

The Americans eat a lot of raw vegetables with mayonnaise. Mayonnaise goes well with boiled potatoes, eggs and onions, too. It’s great. Toichiro commented.
The Americans are huge because they eat such nutritious food. Mayonnaise is made from vegetable oil, eggs and vinegar and is highly nourishing. I’ll try to make it in Japan!

Toichiro returned to Japan in 1916
Even young girls are dressed in plain kimono. Westernization still has a long way to go.
In 1918, Tochiro founded Nakajima Shoten (firm), a wholesaler of canned foods.
In the following year he founded Shokuhin Kogyo, a manufacturer of foods. He was waiting for the right time to market his mayonnaise.
Then the Great Earthquake hit in 1923.

Now women are wearing western clothes. The time has come.
The recovery from the disaster progressed at a rapid pace, and Tokyo became westernized almost overnight.

In 1925, he started to make and sell the first Japanese-made mayonnaise.
He had already registered the trademark of KEWPIE in 1917. The name was taken from a doll popular at that time at the suggestion of a senior employee at the food company where he used to work.
While American mayonnaise used whole eggs; Toichiro used egg yolk for his version to make it richer.
He also started selling marmalade under the Aohata brand.

When a postcard costs 1 sen and 5 rin, mayonnaise at 45 sen for 1 70g bottle was too expensive for ordinary people to afford. Toichiro gave sampling parties at department stores to promote sales.
KEWPIE’s ad spending was said to almost equal to its sales.
We have to promote the name of KEWPIE Mayonnaise first. Let’s do an ad campaign! Toichiro insisted.

The business went well, but the Pacific Was broke out, it became hard to obtain eggs and oil.
We can’t make mayonnaise of poor quality. Let’s stop making it altogether.
After six years of production of mayonnaise resumed in 1947, when it became a gigantic hit, other companies began to enter the market. Let reduce the price, KEWPIE reduced the cost with rationalization and automation, and repeatedly lowered the retail price.
Thus, those late comers to the market lose out to KEWPIE. We can’t beat them in either quality or pricing.

In 1957, Shokuhin Kogyo changed its name to KEWPIE CO, Ltd. Today it is known as QP Corporation.
In 1958, a container made of polyethylene tubing was developed.
The container has three to five layers with plastic in between that allows little oxygen to pass through.
Mayonnaise is made of 70% salad oil, 15% egg yolk, 10% vinegar, and 5% seasoning and spices.
Salad oil is also good for reducing cholesterol. Mayonnaise contains little salt, too.
What a wonder lifestyle ideas management that turn it into a product which is a part of our life, a container in the usual space in the fridge. I cannot go without mayonnaise.

When I was in my Primary school days, the teacher would always says the same word over and over again “Is the class listening?” “Are you listening?”
Never strike me that listening is an art and it is a very important aspect of learning stage of our life. The whole life time is all about listening to others in order to be a good communicator.

Ineffective listening is often the cause of a failed relationship, accidents, lost sales, personality clashes, misguided management and poor communication. Most of us do not listen well because we lack effective listening skills. We tend to listen and hoping that the other person stop talking and we start talking.
Then we tend to assume and jump to conclusion. Poor listening habits are often attributed to lack of training. Listening is an art and the key to better listening is YOU and I. We ought to be slow to speak and quick to listen.
Why we are born with two ears and one mouth, quick to listen and slow to speak (not as to slow in thoughts).

If we are better listener, we can be a good communicator, understanding, appreciative, polite, and empathetic, a better companion.

As a real challenge, we are expected:-

Bosses require us to listen intelligently
Colleagues prefer that we listen enquiringly
Teachers expect students to listen attentively
Parents want their children to listen obediently
Friends need us to listen understandingly
Spouses yearn to listen to each other lovingly
Counselors are required to listen to their clients empathetically.

Re-use old baby clothing instead of buying new pet clothing for your dog.

Never leave your god unattended in direct sunlight or in a closed vehicle. Heatstroke can occur and lead to brain damage or death

Your pet rabbit should have a water bottle available with clean water at all times. The bottle should be washed and refilled daily, even if it is not empty.

Prevent your god from hanging this head out of the window of a moving car.

Exercise dogs and play with cats early or later in the day when it is cooler.

Play with your puppy’s feet when it is young so it becomes used to the idea of having its nails cut.

Do not give cow’s milk to kittens or adult cats because it may cause gas and diarrhea.

If you take your dog to the beach, be sure to give it access to shaded areas and plenty of fresh drinking water.

Use spray bottles with water if it is necessary to discipline your pet. Physical punishment does not teach your pet the appropriate behavior.

Do not shave off all of the dog’s hair. A pet’s coat protects it against the sun.

Brushing your dog thoroughly each day keeps it hair in good condition by removing dirt and debris, and spreading natural oils throughout the coat.

Never over feed the pet. Obesity will create health problems and shorten life.

Always provide your cat with a scratching post to discourage it from destroying your furniture.

Sterilize your pet prevents unwanted litters and reduces the likelihood of contracting certain diseases.

Clean your dog’s teeth with pet toothpaste and a soft toothbrush at least twice a week.

Cats are naturally attracted to plants and will not refrain from chewing or eating them. Be sure to keep all plants out of your cat’s reach.

Stroking and scratching pets helps them to relax and feel more contented.

From puppy hood onwards, redirect chewing behavior to appropriate objects such as chew toys and not shoes.

Never spray your god in the face when showering with a hose.

Make sure your god stays in a sitting position when you introduce a child and or another pet to it, so it is less likely to pounce on or knock the child or animal over.

Never pick up a pet rabbit by the ears.

Be aware of laws involving pets and abide by them.

Always ensure that your pet has access to fresh drinking water 24 hours a day.

A pet is for life. Get a pet when you are sure that you can take care of it properly. Be responsible for their lives.

As a young man imprisoned in a Nazi concentration camp, Simon Wiesenthal was taken one day from his death camp to a makeshift army hospital at the request of mortally wounded Nazi soldier. Tormented by the crimes in which he had participated, the soldier wanted to confess to, and if possible, receive absolution from a Jew. “I know that what I am asking is almost too much for you, but without your answer I cannot die in peace.”

Guilt is one of the oldest sentiments ever expressed in the history of human race. In the open chapters of Genesis, we read of Adam and Eve hiding from God’s voice as he was calling, “Where are you?” The question was intended not to highlight a place but a condition.
Neither Adam nor Eve could break free from the ensuing anguish of a choice made in willful violation of God’s command.
In the similar manner, in Psalm 51 David spoke of the pain within him when his adultery with Bathsheba and the murder of her husband was brought to light. He likened it to the agony of a person with crushed bones. And who could forget the image of Pontius Pilate trying to wash his hands of the guilt that he feared from having sent Jesus to the cross. Even today there is a mountain named after him in Switzerland and legend says that every Good Friday, his ghost is seen coming to the waters of Lucerne to wash away his guilt.

Whether guilt is thought of as a ghost that haunts, or a fractured body or a wounded spirit, all cultures and religions wrestle with the issue of guilt. And herein lies the difference between Christianity and the other religious worldviews. What separates Christianity from the others can be summarized into one word forgiveness.
The one who comes to the cross of Christ knows with certainty that his debt has been paid, once and for all.
Guilt can be eradicated completely. The only way to deal legitimately and adequately with guilt is to surrender it to the grace of God. Then and only then can we die and live in peace. Extracted – sermon from Pastor Richard Lim, 7 October 2007.

Lifestyles Ideas Management – Delicious Sweet Potato Balls

Nowadays if you go to the wet market or supermarket, you will notice the sweet Japanese potatoes in abundance.
My friends love to eat sweet potatoes and I thought it is a great lifestyles ideas to post this delicious sweet potato balls (in Malay it is Onde Onde) and trust that you will try them out. This recipe is kitchen tested and I gave four and half stars for this great snack.

Sweet Potato Balls (Onde Onde)Ingredients:
500g sweet potatoes
7 pandan leaves (screwpine)
5 tablespoon plain flour
½ teaspoon salt
400g palm sugar (Gula Melaka in Malay)
1 coconut grated without skin (steam the coconut)

Method:
Skin sweet potatoes
Boil in with plenty of water with 1 or 2 pandan leaves until it is cooked
Mash while still warm
Pound the remaining pandan leaves and extract juice
Add pandan juice to sweet potatoes and mix well
Sift flour into the mixture and add salt
Shave palm sugar into thin silver
Take a lump of sweet potatoes mixture and flatten into a round about 5 cm in
diameter
Put a few silvers of palm sugar in the centre and shape into a ball
Boil a large pot of water, when boiled drop the balls into it
When they rise to the surface, they are done
Drain and roll in grated coconut while still warm

Lifestyles Ideas Management -Blueberry Cake

Blueberry Cake
A simple cake made delicious with fruits and nuts topping.
Fruit and nuts can provide the essential elements of a healthy diet.
Most fruits contain no fats and are source of good vitamins, minerals and fibre.
Nuts contain some fat, but also give you protein, vitamins and fibre.

Most cakes contain butter and sugar, so carbohydrate and fat is the content.
However, you can cut down the sugar and substitute with wholesome and delicious addition. Berries such as blueberries, blackberries and raspberries are good to use in this cake because the juice seeps through the cake.
Other fruits are just as good, like bananas, dates and apples.
Nuts can be used as a super crunchy topping on simple cake.

Ingredients
250g self-raising flour (sifted)
130g unsalted butter
130g caster sugar (can be 100g)
2 eggs
120ml milk
250g blueberries

Topping
130g flour
100g brown sugar
100g butter, chopped
100g chopped walnut nuts

Method
Grease and lined the baking tin (20cm, 8 inch)
Preheat oven to 180 degree C
Put the topping together in the bowl, rubbing the flour, butter and brown sugar together until it resembles crumbs, then add chopped nuts.
Beat the butter and sugar together until light and fluffy
Add the eggs one at a time, beating at each addition
Continue beating and add the sifted flour and the milk a little at a time until the mixture is a thicken batter
Pour cake mixture into the baking tin and sprinkle blueberries on top.
Sprinkle the topping evenly over the blueberries
Bake in the oven for about 50 minutes until a skewer insert in the mixture comes out without the mixture clinging to it

What we talk about during lunch?

During lunch, four of my friends including me will squeeze into one of the car and took off the old familiar road to some nearby food centre (somewhere airy and less crowded place with good food).
On the way, we will talk about the traffic, music or any subjects that came into mind.
Nothing about work and the office, it is good not to discuss about work as lunch is suppose to be relaxing time away from work.

It’s wonderful to be able to eat and talk at the same time with a common topic; we seldom disagree with one and another. One talk and the rest will listen in and contribute to the conversation. Topics changes from shopping, where is the good food to growing old graciously.

Somehow we touched on the topic; Dementia – a deteriorate lifestyle that everyone is as afraid of ending up as having dementia. We wonder how dementia come about, as Christine put it, dementia comes suddenly. There are signs and symptom – like forgetting the most recent things, what did you had for breakfast?
We talked about playing Chinese mahjong, taking singing lesson, going shopping, meeting up with friends for chatting to keep out dementia. But nobody mentioned on exercise on a regular basis.

As we grow older, our bodies deteriorate both mentally and physically. To counter the getting old effects, we can start exercising on a regular basis.
One week, twice and then increase to thrice and later on a daily basis until this routine get into our body system. Until such time, if we do not exercise our body aches for it.

It is important to stay healthy for our well-being both physically, mentally and emotionally. Never too late to start exercising and take charge of our health by being responsible. We owe it to our body and keep our one and only body well preserve until we kick the bucket. If we abuse our body, nobody suffers except ourselves. Health is wealth which is so familiar and easily quoted by all but yet it is so difficult to carry out this quote.

Determination and Discipline is the keyword – that is lifestyles ideas management which we all need to work it out.

The Three Miners who found GOLD

The story is about three prospectors who found a rich vein of gold in California during the gold rush days. They realized it was a great discovery and they decided,” We’ve a really good thing going there as long as no one else finds out about it.”
So they each took a vow to keep it a secret.

Then they headed for town to file their claims and get the equipment necessary to mine the gold. True to their vows, they didn’t say a word to anybody.
They filled their claim, bought the equipment and headed back to their mine.
But when they did, a crowd of people followed them.

And the reason was because the expression on their faces had given them away. Their faces were aglow in anticipation of the wealth that soon would be theirs. People knew that they must have found something very special. So a crowd followed them out of town.

How true is this story, we can never conceal sadness, happiness, joy, suffering, doubtful, dejection feelings on our faces. Our facial expression and our eyes give us away.
We can never hold back the joy and happiness even though we keep it a secret somehow our body language will show the effect, our tone and action speak louder.

When we are sad, somewhat the body language will show besides facial expression and eyes, the tone and action will be lifeless even though we try best to hide.

It is good that we cannot contain these feelings, so that others around us will notice and perhaps say a kind good word, an encouraging pat and even go all the way out to bring a smile on our face.

No matter what tomorrow will bring for we do not hold tomorrow, keeping smiling and brighten up you days and those who see you smiling, will too return a smile.

I must smile at all time; if I do not smile I look fierce!

MAN PUT HOPE IN COUNTERFEIT MONEY

Have you ever had high hopes for something and then seen those hopes crumble to pieces? It happened to one man in Pittsburgh, Pennsylvania. His story hit the news wires as one of those sadly humorous, stupid-thief tales. Actually, if you knew him, his story is probably only very sad.

He wanted money. Maybe he desperately needed money. Perhaps he had a substance addition or owed tens of thousands of dollars on a charge card. Regardless, somehow he got the idea to go into a grocery store hand the checkout clerk counterfeit money, and ask for change. If it worked, he would get real money in exchange for fake money. Brilliant!

He was a big thinker. If he was going to risk attempting this fraud, he was going to do it in a way that would set him up for life. So he decided to try to pass off not a counterfeit $100 bill, not a counterfeit $1,000 bill, not even a counterfeit $10,000 bill but a counterfeit $1,000,000 bill.

Again, you can pat this poor fellow on the back for thinking big, but you also have to pity him for thinking badly. First, you have to suspect that the average checkout clerk doesn’t keep a million dollars in her drawer. Second, you have to think that a one million dollar bill is going to attract some extra attention and might even bring the scrutiny of the store manager. Third, this is the clincher – there is no such thing as a $1,000,000 bill. The largest currency printed in the U.S. is a $100 bill.

When the counterfeiter walked into the supermarket on that Saturday in Pittsburgh, holding that one million dollar bill in his sweaty hand, just imagine his soaring hopes. Soon he would be able to pay his bills, buy a nice house and car, get all the things he had always wanted, do not have to work another day in his life. This would be his lucky day!

Needless to say, his high hopes were dashed. The checkout clerk refused to give him a change for his bogus bill. The manager came and confiscated the forgery. His dreams went up in smoke. He got angry. He grabbed the electronic fund transfer machine and slammed it on the counter. He tried to grab the scanning gun used to read product labels. Soon the police had him in custody.
It’s sad, sad thing when a person’s high hopes come to nothing.
How do you know when you hopes are resting on something true and legitimate and real, instead of on something bogus and stupid? Where do you place your hope?

Lifestyle Ideas Management -Rambo Tragic Story

This is a Lifestyles ideas management - true story of broken heart

Rambo is an Australian terrier and came into the family when she was a few months old.
And you know that she was the one that makes the whole house noisy with her barks, he never stop to rest spirit that set everyone’s shouting “Silence”, “Shut up” and sent her away in the backyard.

As days goes by, Rambo is one of the family and she know who loved her best.
She will always wait at the door for all the family to come home. And when home, she will accompany each and every person to the room. She licked, jumped with joy as she welcomed everyone back home. What a touching scene, a faithful doting servant, never failed to welcome the family members.

Even she was not well, she will still make the efforts to at least whack her tail.
She knows what was right and wrong, from our stern faces expression she will hid under the table. When she does wrong, she goes into hiding until she heard her name being called and then slowly she will creep and lie down at your feet.

When it was time for us to make a decision not to keep her as we need to move from our present accommodation into a five room apartment and the living areas do not permit her presence. Moreover, we were not able to afford a helper.
At that time, Rambo was about eight years of age.

We found a new owner living off a fishing lagoon in zinc roofed wooden house, a middle aged man who loves animals. We took Rambo there in a small boat and let her roamed freely as a first day orientation program. She seemed to like this new place, jumped up and down, running around excitedly. She probably though that it was her first holiday stay and never did she know that this was her permanent place.

After the next few visits, that evening it was time to say goodbyes.
We put her in the house and went down to the beach to take the boat back to the mainland. She dashed out of the house and went down the beach.
At that instant, she barked with all her might as we stepped into the boat.
Her barks became more and more intensified, it was as if a dying man grasping for the last breath. The new owner restrained her and we waved our goodbyes with tears and emotionally stressed up.

After one week, we heard about her passing away.
The new owner related this story:-
Since the time you left, she never stepped into the house.
She kept her distance at the same spot where she saw our departure that farewell day.
Never eat and drink, she slept somewhere and never failed to turn up on the spot every 5 am and evening time. She would bark until her throat turned hoarse. This happened for the whole week and one day, the owner found her drowned, washed in by the beach.

She probably thought that she had enough of waiting and perhaps by swimming across to search for us. She must had felt being abandoned, alienated feeling and broken hearted.
She did not die of drowning; she died of a broken heart.

Lifestyles Ideas Management -My Thoughts Aloud

Hello,

I just finished my third lessons on Internet marketing and it already add some sense to this whole new media of marketing.
I just created my first AdSense account with Google.com and it is just the beginning of something exciting in my entire waking life.

I should have gotten an early start in this Internet marketing at least my dull life could have make some dollars and cents in my bank account. Being simple minded, a dollar US will also
make my heart skipped fast enough. I am just happy with small amount.

I am thinking aloud that if I ever gotten my first cheque in US dollars, you know what I will do.
I will show it to all my friends and have my take pictures in my mobile, especially with my name printed on it under the Payee account. Some folks just cannot believe that Internet marketing is a money making hard work efforts.

Some folks thinks that I am just pulling their legs and I found it so disappointing with my
friends.
Just wait and see! Seeing is believing.....

I am going to work hard to make sure that I put in enough efforts to make this a great successful. Not about just making money but to make more friends as well.
Tonight, it was really an exciting lesson taught by my mentor and so excited that I cannot sleep but to post my thoughts out loud.
Just as my mentor said " you got to keep on posting" until you add value to your blog.
I am just going to do it daily until there is solid content in my blog and it bring you much sense to read them. Be encouraged , be inspired, be aware and learn something useful from me.
That is my lifestyle ideas management!
