Flours
The most commonly used flour for bread making is wheat.
Strong wheat four has high gluten content and gives a better volume of bread as it absorbs more water and makes a lighter dough.
White flour can also be used however the bread is light and have very little weight
Kneading
Kneading is an essential pat of bread making as it helps to develop the gluten and the rise of the dough. Flour a board and use the palms of the hands, almost to the wrists to push and turn the dough. As you work you can actually feel the texture changing to a smooth, elastic but not sticky consistency.
Proving
Always cover the dough when setting it to prove
The yeast in the dough need warmth to start working
The ideal temperature is between 98 and 100 degrees F
Too much heat will kill the yeast, too little will stop it from working
The best place to leave the dough to price is a warmth place, near the cooking stove
The time taken for the dough to rise will depend on the warmth but it usually takes 1 -1 ½ hours. The second rising is quicker usually between 20 minutes and half and hour
