Blueberry Cake
A simple cake made delicious with fruits and nuts topping.
Fruit and nuts can provide the essential elements of a healthy diet.
Most fruits contain no fats and are source of good vitamins, minerals and fibre.
Nuts contain some fat, but also give you protein, vitamins and fibre.
Most cakes contain butter and sugar, so carbohydrate and fat is the content.
However, you can cut down the sugar and substitute with wholesome and delicious addition. Berries such as blueberries, blackberries and raspberries are good to use in this cake because the juice seeps through the cake.
Other fruits are just as good, like bananas, dates and apples.
Nuts can be used as a super crunchy topping on simple cake.
Ingredients
250g self-raising flour (sifted)
130g unsalted butter
130g caster sugar (can be 100g)
2 eggs
120ml milk
250g blueberries
Topping
130g flour
100g brown sugar
100g butter, chopped
100g chopped walnut nuts
Method
Grease and lined the baking tin (20cm, 8 inch)
Preheat oven to 180 degree C
Put the topping together in the bowl, rubbing the flour, butter and brown sugar together until it resembles crumbs, then add chopped nuts.
Beat the butter and sugar together until light and fluffy
Add the eggs one at a time, beating at each addition
Continue beating and add the sifted flour and the milk a little at a time until the mixture is a thicken batter
Pour cake mixture into the baking tin and sprinkle blueberries on top.
Sprinkle the topping evenly over the blueberries
Bake in the oven for about 50 minutes until a skewer insert in the mixture comes out without the mixture clinging to it
